ABSTRACT
The study seeks to assess the physical; sorting and grading and jam properties of African cherry (chrysophyllum albidum). The study was carried out in Animal Science Laboratory in the Department of Animal Science, Faculty of Agriculture, University of Benin, Benin City, Edo State, Nigeria. The end result shows that Chrysophllum albidum is suitable for Jam production and it would optimally reduce fruit wastage and increase its availability throughout the year. The sheathing time (ST) for Chrysophyllum albidum was between 40 – 60 minutes and this was dependent on the percentage combination of cherry pulp and sugar. From the experiment for examining the physical; sorting and grading of African cherry fruits it was observed that African cherry gets bad after about 5 days of storage under room temperature. Therefore, African Cherry should not store under room temperature for no more than 5 days as spoilage is set to occur in the fruit and it should be consumed almost immediately.
