ABSTRACT
The result for proximate analysis on yam flour showed carbohydrates 81.11± 0.19, crude fibre 1.47± 0.46, Ash 1.20 ± 0.05, Crude fat 0.80±0.10, protein 1.11 ±0.02 and moisture 13.79±0.15. From the results, yam flour has a high carbohydrate content and the low value of moisture indicating a longer shelf life. The Proximate Analysis also showed that yam flour contain minerals nutrient such potassium, sodium, calcium, and magnesium, In reasonable amount. Therefore the immunity and Physiochemical properties of yam flour can be attributed to this minerals.
