ABSTRACT

The broad objective of the study was to examine the clean state of the university of benin canteen. The Survey research design was adopted for the study. The data used in this study was obtained from from a well-structured questionnaire which was validated by the supervisor, administered to respondents and retrieved for analysis. The method of data analysis uastilized was the frquency count, mean and standard deviaation. In line with the study objectives, the findings reveals that, information status of food handlers working in canteens in the University of Benin on food hygiene is commendable. Canteen operators are quite aware that food not properly cooked can cause the growth of bacterial on the food as food hygiene practices is one of the basic information canteen operators should have before venturing into it. Food not properly stored in the right place and the right way is detrimental to the health of consumers as food hygiene practices is pivotal in running a food vendor business. canteen operators do not have adequate information on food hygiene practices. Also, the knowledge status of food handlers working in canteens in the University of Benin on personal hygiene practices is quite good and acceptable because they are aware that dirty waste water and waste litters around the canteen environment should be disposed. It was recommended that school management should ensure that adequate trainings, seminars and symposia are conducted for canteen operators in University of Benin for better operation; and that university of Benin should ensure that proper monitoring is done for canteen operators so that they can adhere to best food handling practices as obtainable in western countries.
