ABSTRACT
In this study, watermelon juice was prepared and stored for a period of six (6) weeks, and the effects of storage time on the Physico-chemical characteristics of the juice was monitored. The physico-chemical characteristics of the juice determined are as follows; pH of the watermelon juice which ranged from 5.3 - 3.5, titratable acidity 0.14 - 0.94, specific gravity 1.027 - 0.992, electrical conductivity 3.24 - 3.76µS/cm, vitamin C 40.48 - 12.76mg/100ml, reducing and total sugar 5.17 - 6.67% and 7.68 - 8.59%, respectively and UV-Vis spectrum absorption peak at 218nm and 338nm corresponding to the presence of lycopene and vitamin C respectively.
