ABSTRACT

Trichosanthes cucumerina Linn ( snake gourd) was tested on three different Storage conditions, the one kept at room temperature ( open Air storage), under cold storage at 0°c and cool storage at 10 °C , it was observed that the ripe put under room temperature storage deteriorated after 48 hours, the unripe kept at room storage was still fresh after three day , but the Epicarp became wrinkled after 3 weeks, the half ripe kept at cool storage , gradually changed in color, but the fruit still retains it's texture and smell.
