PROXIMATE AND ELEMENTAL ANALYSIS OF Zingiber officinale Roscoe (GINGER) AND Cyperus esculentus lativum (TIGERNUT)

ABSTRACT

This study was conducted to determine the mineral and proximate analysis of Ginger and Tiger nut. The plants were purchased in the open market at Oba market. Atomic absorption spectrometry (AAS) and standard method were employed in the proximate analysis of the minerals. Sodium and potassium were analyzed with Flame photometry while magnesium, calcium, iron and copper where determined by AAS. The proximate composition follows the order for ginger carbohydrate (30.17%) > fat (21.04%) > crude fibre (18.05%) > moisture content (15.6%) > crude protein (13.20) > ash (1.94%). While for tiger nut the order was carbohydrate (31.08%) > fat (20.4%) > crude fibre (19.06) > moisture (16.7%) > crude protein (12.08) > ash (0.68%). The results of the mineral content of ginger revealed potassium (76.04mg/kg) > magnesium (13.3mg/kg) > calcium (10.3mg/kg) > sodium (2.81mg/kg) > iron (2.2mg/kg) > zinc (0.46mg/kg). while that of tiger nut was potassium (63.57mg/kg) > calcium (8.2mg/kg) > magnesium (6.8mg/kg) > sodium (4.45mg/kg) > zinc (0.95mg/kg) > iron (0.5mg/kg).This finding shows the richness of this plants in proximate constituent and beneficial elements.
