ABSTRACT
Coconut oil is a substance obtained from coconut palm (Cocos nucifera L.) fruit grown mainly in Africa. In this study the production of butter using coconut oil was carried out. Coconut samples was purchased from New Benin market in Oredo Local Government Area of Edo, it was transported to the Department of Plant Biology and Biotechnology for identification and deposited at the herbarium. The cooled press method of extraction was employed in extracting and solidification of the oil into butter. The following analysis were carried out, which are phytochemicals analysis such as; test for alkaloid, flavonoid, saponins, glycoside, tannins, phenol, steroid, resin and terpenoid. Physical properties such as saponification values, density, percentage yield, appearance and odour. Mineral content such as; Copper, Zinc, Iron, Phosphorus, Magnesium, Calcium, Potassium and Sodium. The study revealed that alkaloid, flavonoid, saponins, glycoside, tannins, phenol, steroid, resin and terpenoid were present . Saponification value was 252.22, density (kg/m3) was 915.86, Percentage yield was 24.9%, appearance was Colourless and the odour was coconut smell. Mineral content (mg/g) were; Copper 1.24, Zinc 0.76, Iron 0.62, Phosphorus 4.54, Magnesium 38.1, Calcium 25.87, Potassium 29.92 and Sodium, 16.92.
