In summary, this study has suggested that various organisms spoil “Egusi” soup. Since most of the spoilage organisms are able to produce toxins, “Egusi” soup when sour or spoiled is unfit for human consumption. Thus, it is therefore necessary to preserve “Egusi” soup from spoilage by proper refrigeration or freezing and by thorough reheating of the soup in a situation where refrigeration is not available.
