ABSTRACT
Minerals are inorganic substances that are present in the fluids and tissues of the living organisms, their presence is necessary certain physicochemical processes which are essential to maintain a healthy living. This study was to evaluate the micro minerals (Iron, Zinc, Copper, and Manganese) composition of Tigernut milk, Coconut milk and a blend of both milk at graded levels which were served as treatment were 100% TN, 100% CN, 25% TN : 75% CN, 50% TN : 50% CN and 75% TN : 25% CN. Treatment T1 and T5 served as control samples which were made from 100% Tigernut and Coconut milk respectively. The samples of graded levels of milk blends as well as Tigernut and Coconut milk were subjected to mineral (Zinc, Iron, Copper and manganese) analysis using wet digestion method, which involved taking 1 mL of the milk sample and digesting with 10 mL of the digestion acid made with Nitric and Perchloric acid in a ratio of 3:1. After digestion the samples placed in a cornical flask was heated using a hotplate, and the digest was washed with 25 mL distilled water into a volumetric flask and was made up to mark of 100 mL. 20 mL of the digest was taken to the lab and analyzed using Atomic Absorption Spectrophotometer.
