MACRO MINERAL COMPOSITION OF MILK OF TIGER NUT COCONUT MILK

ABSTRACT

With increasing cases of lactose milk intolerance and increasing cost of production of the much needed dairy, research has expanded to look for more sustainable, healthy and cost friendly ways to make milk and milk products available to consumers without compromising the needed nutrients needed for healthy growth and proper body functioning. This study was carried out to evaluate the macro (mineral) composition of tigernut-coconut blends combined at graded levels. The levels which served as treatments were 100%TN, 75%TN:25%CN, 50%TN:50%CN, 25%TN:75%CN and 100%TN. The milk was gotten by extraction from both tigernut and coconut plants, after washing and soaking. Then it was milled with hot water at a temperature of 80oC, allowed to cool and then refrigerated. No additives was added to the milk, they were further combined at graded levels and taken to the laboratory for mineral analysis which was carried out using the Atomic Absorption Spectrophotometer (AAS). The results showed that tigernut-coconut milk blend had a composition of sodium (4.72-4.86 mg/L), magnesium (0.47-0.63 mg/L), potassium (3- 27-5.22 mg/L), phosphorus (0.11-1.52 mg/L) and calcium (0.20-0.40 mg/L). This study revealed that the tigernut-coconut milk blends contain macro minerals that can be used to fight the deficiency of macrominerals and although the mineral composition is not as much as that of dairy, but with fortification, it can meet all needed requirements.
