There have been numerous initiatives to improve the nutritional content of snacks-foods by including dietary fiber in our diets. The health benefits of coconut were then utilized to boost the dietary fiber in a carbohydrate-rich food like tapioca (kpo-kpo garri), which is a tasty, inexpensive, and healthy option. Cassava was peeled, washed, grated, sieved, and dried to remove the tapioca from the roots. The leftover material was then ground, sieved, and dried to remove the coconut chaff from the coconut meat as well. It was then combined and cooked together, then sun-dried to remove excess moisture. The proximate analysis of the blend was assessed using standard methods. Results revealed that protein, fat and oil, ash and fibre increased, the moisture content varied with each sample while the carbohydrate reduced significantly. The fibre increased from 2.70% to 4.37%, a significant increase which would help reduce lifestyle diseases such as diabetes, obesity, intestinal cancer, constipation and other disorders that have serious adverse effects on the health of human being.
