ABSTRACT

In aiding bowel movement, it has become imperative to develop substituted food products rich in fibre value. The results from this study, however, showed a reduction in the fibre value of tapioca-plantain blends as there was an increase in the plantain content which can be attributed to the presence of plantain starch in the blend.
