ABSTRACT
Tapioca is a crunchy snack that is made from cassava root. It is popularly known as KpoKpo garri, and is consumed by many Nigerians, Being a starchy meal, tapioca has a higher concentration of carbohydrates as well as other essential nutrients the body needs for healthy functioning. Individuals develop digestive tract disorders due to various reasons such as age, bacteria in food, medical conditions and genetics. Although tapioca has fiber, it is inadequate for daily intake, therefore increasing the fiber content would be advantageous for people facing digestive tract problems and other related issues. The aim of this project is to increase the fiber content of kpokpo garri (tapioca) by using carrot in powder form as a fortifier. Therefore making the tapioca more beneficial for individuals with digestive problems and the general public.
