ABSTRACT
Dietary fiber is the portion of plant material in food that cannot be broken down by enzymes. It is made up of cellulose, hemicellulose, non-cellulosic polysaccharides and peptic substances which are not carbohydrates. Diets high in fibre, such as those made up of grains, nuts, fruits and vegetables are good for your health because they have been linked to a decline in the occurrence of various diseases. The utilization of dietary fibre is possible in a variety of foods like Tapioca, beverages and animal products. Proximate analysis was carried out to know the composition of tapioca and date and from the results obtained, it was seen that there was an increased amount of fibre. Hence, it is concluded from the results that date can be used as a fortifier in tapioca which in turn improves the gut health of people.
