ABSTRACT

The effect of storage conditions on the properties of oil, focusing on acid value and saponification value. The test carried out shows the value of acid and saponification in five vegetable oil mainly Emporium oil, groundnut oil, olive oil, palm oil, animal oil. For emperor oil, the acid value was 0.98 ±0.07 after two weeks, which was still tested after six weeks which became 3.37±0.07. all this acid value for emperor oil was gotten after the emperor oil was being stored in the shelf.

When the sample (emporium oil) stored in a cupboard (not exposed to light), the acid value gotten after two weeks is 0.85±0.07. 2.50±0.21 was gotten after six weeks of storage. The third sample of emporium oil which was stored in the refrigerator (lower temperature) was taken out and the acid value after two weeks of storage is 0.85±0.14. The same sample was stored again for another two weeks, making it a total of six weeks and the acid value gotten after six weeks is 2.22±0.19. focusing on the saponification value, for emperor oil, the saponification value was 129.93±0.20 after two weeks, which was still tested after six weeks which became 133.94±0.50. all this saponification value for emperor oil was gotten after the emperor oil was being stored in the shelf. When the sample (emporium oil) stored in a cupboard (not exposed to light), the saponification value gotten after two weeks is 128.33±0.30. 132.54±0.50 was gotten after six weeks of storage. The third sample of emporium oil which was stored in the refrigerator (lower temperature) was taken out and the saponification value after two weeks of storage is 121.32±0.20. The sample was stored again for another two weeks making is a total of four weeks. The same sample was stored again for another two weeks, making it a total of six weeks and the saponification value gotten after six weeks is 122.72±0.30.

For consumption purpose, it is advised that oil should be stored in refrigerator.
