ABSTRACT

Palm oil has surpassed soybean oil during the last decade to become the most produced vegetable oil in the world, accounting for 57% of vegetable oil exports in the markets. In Nigeria, it is a major consumer product that is readily available in the local market especially in the Southern part of the country. Its quality degrades with time and is dependent on storage conditions. This study thus, was aimed at assessing the peroxide value, iodine index, electrical conductivity, and UV absorbance of a locally sourced palm oil sample. All procedures employed in assessing the physicochemical properties were standards set by the American Oil Chemists Society (AOCS) and studies were done on weekly intervals for six weeks.
