ABSTRACT
Melon is said to be a very well-known vegetable crop in the whole West Africa. It is usually most consumed as soup in Nigeria and is porpularly called “Egusi” in Ibo language. The crop’s family is cucurbitaceae. This study was conducted to determine the proximate composition of defatted melon seed flour (DMSF) and its mineral composition. The melon seeds were defatted and defatted to obtain the cake which was grounded to flour. This research was done to ascertain the proximate and mineral composition on the melon seed flour. From the results it was seen that moisture content of Defatted Melon Seed Flour (DMSF) obtained for month 0 and month 1 were 2.42% and 14.59%, crude protein content (28.11% and 28.85%), crude fat content (27.75% and 27.35%), crude fibre content (2.98% and 3.05%), ash content (9.92% and 1.63%) and carbohydrate content (31.22% and 39.19%). It also showed the mineral composition of whole melon seed flour of potassium (241.10 and 243.50 mg/kg), sodium (2.41 and 2.88mg/kg), manganese (2.10 and 2.02mg/kg), zinc (1.32 and 1.27mg/kg), calcium (0.42 and 0.67mg/kg) and iron (1.10 and 1.20mg/kg) for month 0 and month 1 respectively. This indicates that DMSF is a great source of vital nutrients such as protein, fat and carbohydrate content to humans and animals alike.
