DETERMINATION OF THE FATTY ACIDS PROFILE IN SOLVENT EXTRACTED MELON SEED OIL

ABSTRACT

The composition of fatty acids present in vegetable oils and the ratio between saturated and unsaturated fatty acids are important parameters to determine the nutritional value of seed oils or vegetable oils. Therefore, the content of each individual fatty acids of edible oil must be known. However, the main objective of this present work was to produce solvent extracted melon seed oil and to determine the fatty acid profile of the oil using Gas Liquid chromatography mass spectroscopy (GCMS). The oil was extracted using chloroform and methanol mixture in a ratio of 2:1.The result shows that palmitic, stearic, oleic and linoleic acids were the main fatty acid present in melon seed oil. It also shows that it contain higher content of polyunsaturated fatty acids which decreases the risk of coronary heart disease. The P/S index (polyunsaturated/ saturated index) (2.87, 2.65, 2.43)which is associated to the determination of nutritional value of oils was found to be above one making it relatively safe and suitable for consumption.
