ABSTRACT
This study aimed at determining the chemical properties of groundnut oil through comprehensive analysis, the chemical properties determined include Iodine value, Peroxide value, Saponification value, Free fatty acids and Cholesterol content. The results obtained revealed acidity levels within accepted standards, with the highest value being that of sample 4 with a free fatty acid of 1.69. The saponification value of the various groundnut oil sample ranged from 170 to 191 while the standard saponification value in accordance to NAFDAC ranges from 187 to 196, the sap value of sample E was below the standard. The iodine value reflects unsaturation level, the analysis of iodine value ranges between81 to 86 which is in accordance to the NAFDAC standard of value range 77 to 107. Peroxide value indicates freshness of the oil, the value ranged from 2.1 to 9.1, with sample A being the highest and sample E the lowest.
