ABSTRACT
As potato chip consumption has increased, food manufacturing industries have been tasked with processing large numbers of potatoes quickly, so mechanization of processing operations will help remove the drawbacks of traditional processing methods and promote timely large scale production with desired quality to meet consumer demand. Some steps require potato slicing and cutting. This study traces the evolution of a potato slicing machine. An electrically powered potato slicing machine chops raw potatoes into thin, consistent pieces. Potato slicing machines can be made using inexpensive, generally available materials. Mild steel, stainless steel, and others are listed below.
