ABSTRACT

Milk is a nutritious basic food. It is rich in proteins, carbohydrates, fats, calcium, riboflavin, and other B vitamins. Milk and milk products are most popular and widely consumed by people all over the world. There are several kinds of milk products available and among them the most important is ice cream. The presence of microorganisms in ice cream such as Salmonella sp, Staphylococcus aureus, Escherichia coli have been well documented but examination of pathogenic bacteria like Bacillus cereus, Salmonella sp, Listeria monocytogenes, Klebsiella spp, and Escherichia coli have been rarely studied. In this study Species of Lactobacillus, Klebsiella, Enterobacter and Staphylococcus were among the different bacterial genera isolated. These bacteria cause unpleasant human pathological conditions when consumed in large quantites. The bacterial load in the icecream samples was also significantly high with total heterotrophic bacterial count values ranging from 1.43x107 ± 2.02 CFU/ml to 2.43x107 ± 1.45 CFU/ml. Chitosan is a polysaccharide of marine origin produced from chitin of the exoskeletons of crustaceans with several biological activities such as antioxidant activity, antibacterial activity and antihyperlipidemic activity. The antibacterial activity of chitosan against the bacterial isolates was evaluated in this study. It was observed that chotosan had inhibitory effect on the bacterial isolates at all concentrations with zones on inhibition ranging from 4 mm (at 25 mg/ml) chitosan) to 34 mm (at 100mg/ml). This results from this study are indicative of the potential of chitosan to be used as a natural alternative to antibiotics to which bacterial resistance is becoming more common.
