ABSTRACT
This research work presents a comparative study on the techniques that can be used to process tomato into different end products. The processing techniques considered are drying\dehydration, tomato pulp production and tomato paste production. This study was done to know the best and most effective method to process tomato and reduce post harvest losses.
The project details steps needed to prepare tomato for processing which includes sorting, grading, washing, coring, peeling e.t.c. Different method of drying were used to obtain certain parameters needed, exposure to direct sunlight, utilization of a passive, indirect solar dryer, and drying in a convective electric oven. Seed removal and moisture reduction are emphasized in pulp and paste production.
By using these methods the study helps to educate and enlighten, by providing a sustainable alternative which reduces the loss in tomato after harvesting. Moreover this project contributes to the broader objective of promoting sustainable processing techniques and advancing the present technologies within the agriculture sector, in alignment with the industry’s evolving needs and environmental concerns.
