CHARACTERIZATION OF JUICE EXTRACTED OF WATERMELON FRUIT

ABSTRACT

Proximate analysis and physiochemical properties of watermelon juice sold in a selected local market (uselu) in Benin city, Nigeria was anlyzed in this study. The study was carried out using standard methods of analysis of selected physiochemical properties for  pH, ash content, moisture content, total dissolved solid, titrable acidity, sugar content, electric conductivity, specific gravity, Na, K, Mg, Fe, Cu, Zn and Ca of freshly prepared and preserved watermelon juice. Results obtained showed that pH 2.2 to 5.8, ash content, moisture content, total dissolved solid, titrable acidity below 120%, sugar content, 7% to 14%, electric conductivity, specific gravity1.020 to 1.075 and mineral elements which are; Na, Mg(less than 8ppm), K, Zn(5ppm), Ca, Fe(15ppm), Cu. The watermelon juice sample is within regulatory specification and is therefore recommended for consumption.
