ABSTRACT

This study entails the processing of ginger powder involving proximate analysis,analysis for selected phytochemicals and minerals element constituents. The particular phytochemicals that were examined includes; Flavonoid, saponin, glycoside, phenols, alkaloids, tannins,steroids and Quinones and the mineral element tested for includes Sodium, Magnesium, Iron, Zinc, Calcium and Potassium. The ginger rhizomes used for this analysis was obtained from Uselu market, Edo state, Nigeria. Standard methods were used for processing the ginger powder. From my findings,it was shown that fresh ginger rhizomes contained the following values for the minerals tested for: Fe (1.00mg/L),Mg (0.75mg/L),Ca (0.50mg/L),Zn (0.80mg/L),K (19.7mg/L) and Na (2.2mg/L). For the processed ginger which was dried in an oven at a temperature of 400 c,the values gotten were given as:Fe (1.20mg/L),Mg (0.91mg/L),Ca (0.60mg/L),Zn (1.10mg/L),K (87.6mg/L), Na (7.70mg/L).Based on my studies,it has been shown that ginger is a good source of the examined minerals.
